Pause new redemptions

Pausing stops new redemptions. Offers customers have already reserved stay valid until their reservation expires.

Redeeming reserves one slot and its funding; funding is consumed only when a qualifying purchase completes. Released and expired reservations free their slot and funding (daily redemptions still count). The prototype applies these changes in one step; production needs server-side enforcement. Gross purchase value is total purchase value through Yayday, not incremental sales or proven profit.

New and returning counts are within Yayday history only. They don't label a customer as genuinely new to the store.
